Spicy Cucumbers

Crunchy Korean-style spicy cucumbers. Salt them first to pull out water, then marinate in a rice vinegar and sesame dressing.

  1. 1.Add the sliced cucumber to a bowl, sprinkle with 1.5 tbsp kosher salt, and toss to combine. Let sit 30 minutes in the fridge.

  2. 2.Rinse off the salt and pat the cucumbers dry.
  3. 3.Whisk together the rice vinegar, mirin, sugar, sesame oil, garlic, and the marinade salt. Set aside.
  4. 4.Toss the cucumbers with the dressing and marinate at least 4 hours, up to 2 days.
  5. 5.Taste for seasoning, drizzle with chili oil, and serve chilled. Sliced fresno chile on top is nice.
