Spicy Cucumbers
Crunchy Korean-style spicy cucumbers. Salt them first to pull out water, then marinate in a rice vinegar and sesame dressing.

- 1.Add the sliced cucumber to a bowl, sprinkle with 1.5 tbsp kosher salt, and toss to combine. Let sit 30 minutes in the fridge.30:00
- 2.Rinse off the salt and pat the cucumbers dry.
- 3.Whisk together the rice vinegar, mirin, sugar, sesame oil, garlic, and the marinade salt. Set aside.
- 4.Toss the cucumbers with the dressing and marinate at least 4 hours, up to 2 days.
- 5.Taste for seasoning, drizzle with chili oil, and serve chilled. Sliced fresno chile on top is nice.
