Smoked Salmon Finger Sandwich
Smoked salmon tea sandwiches on thin-sliced grain bread with a herby lemon-dill butter. Chill them firm before cutting into triangles.

- 1.For the herb butter, combine all the butter ingredients in a mixer fitted with a paddle. Beat until mixed, but do not whip.
- 2.Have the store slice the bread lengthwise on a meat slicer into 1/4-inch slices. If that isn't possible, slice it crosswise with a very sharp knife.
- 3.Lay out 8 slices and spread each with a thin layer of herb butter. Place smoked salmon on 4 slices, top with the others butter-side down, then set on a baking sheet, wrap in plastic, and refrigerate until the butter is very cold.
- 4.On a cutting board, trim the crusts with a sharp knife, cut each large sandwich in half crosswise, then cut each half diagonally twice for 8 small triangles. Serve chilled.
