Daegu Jorim (Braised Black Cod & Radish)

Korean soy-braised black cod over daikon that drinks up the sauce. The fish is delicate, so baste gently and try not to break it apart.

Seasoning sauce

  1. 1.Cut up the daikon into 1/2-inch rounds.
  2. 2.Add 2 cups of water to a big pot or pan and lay the daikon in to cover the bottom.
  3. 3.Cover and cook over medium-high heat for 15 minutes.

  4. 4.Flip the daikon, layer the green onions and then the black cod on top, pour the sauce over, and cook for 10 minutes.

  5. 5.Baste the fish for 5-7 minutes, being careful not to break up the delicate pieces. Let the sauce thicken by scooting the daikon into a pile.

  • Soy sauce flavor came out too strong and the braise was a little watery. (Next time try gochujang, doenjang, and sesame oil for more umami — it's daikon-heavy so it skews sour)
